Seems to be that the Rexes and Giganotosauruses have stat increases over that the official servers have. The Rex has a 33 percent increase on health, food, weight, melee and movement, while the Giganotosaurus has 69 percent increase on health, 21 percent increase on food, weight and movement, and 30 percent  increase on melee.

The other dinos seem to have the same stats between default and official servers. I guess they nerfed those two for PvP server and made it the same for PvE servers but never set it as default.
